Generally to be found around Block 5, (sometimes up in the Chardonnay, or grubbing in Block 1 Riesling). The real issue is: do the eggs change when they shift terrior? The word on the block is to go for scrambled when they are in the Pinot, poached when they are in Chardonnay and make a Hollandaise from Riesling verjus for a Block 2 Benedict.
