1997 Pinot Noir

Tasted at the winery with the sommelier and owners of Tantris, a 2 star Michelin Restaurant in Munich.

This one was a good cork, and showed the huge difference a cork and cellaring can make. The wine was fresh, lively, but fully mature. I hate saying very Burgundian, but as the wines mature that is the only reference that really works, this was like tasting a good Volnay or Chambolle, from 95 or 97. One can see the start of a fruit decline, but it is still full and certainly not tasting over the hill. The wine is definitely fully mature and will decline from this point, unless you are a real decay lover, drink now.
